Recipe : Balsamic Roasted Vegetables
Ingredients:
4-6 cups assorted vegetables (I’ve used combination of carrots, onions, cauliflower, mushrooms)
4 tbsp of balsamic vinegar
1 tbsp of dried Italian seasoning or dried oregano, basil and rosemary
Salt and pepper
Oil (Spray)
Instructions:
Pre-heat oven to 425ºF and line a roasting pan with parchment paper.
Toss the vegetables into oil, vinegar, seasonings/spices.
Spread on a single layer on a sheet pan and roast for 20-30 mins.
Tossing and flipping them over about halfway through, or until veggies are tender.
