Recipe : Pan Fried Cod with capers and Basil
Ingredients:
200g Cod (washed and pat dry, seasoned with ground black pepper)
1 ½ tsp of capers (chopped/crushed)
1 clove garlic (minced)
½ lemon juice and zest
Salt and pepper
¼ cup chopped basil and parsley
½ bird eye chili (chopped)
Oil (spray)
Instructions:
Heat oil in the pan.
Pan fry fish on a medium heat for 1-2 mins.
While cooking or before cooking the fish, prepare in a bowl the basil, parsley, capers, lemon juice zest, chili and salt and pepper.
Mix it well.
Once the fish is already cooked, turn it over carefully.
Place ½ of the basil mixture on the top of the fish and cook it for another 2 mins or until cook through.
Place the fish on a plate and garnish with the remaining basil and parsley.
