Recipe : Pan Grilled Yellow Squash with Dill Vinaigrette
Ingredients:
2 medium size yellow squash
1 tsp Dijon mustard
½ tsp of stevia
2 tbsp of apple cider
2 tbsp chopped fresh dill
Oil (Spray)
½ tsp onion powder
Salt and pepper
Instructions:
In a medium bowl, mix all ingredients except for yellow squash, set aside.
Cut squash in half, crosswise and slice lengthwise into 3-4 pcs then add it all to the bowl of vinaigrette.
Toss to coat, marinate for 15-30 mins.
Heat pan (griddle) and oil.
Remove squash from marinade and grill over medium-high heat for a couple minutes each side or until chargrilled marks appear and squash is just tender.
Serve immediately.
