Recipe : Ginger and Lemongrass Chicken

Ingredients:

  • 2 chicken breasts

  • 3 stalks lemongrass (chopped into tiny pieces)

  • 1 tbsp grated ginger

  • Handful coriander (chopped)

  • Salt and pepper

  • Oil (spray)


Instructions:

  1. Mix all the ingredients.

  2. Marinade chicken for 15-30 mins.

  3. Heat oil in the pan.

  4. Cook chicken for 2-3 mins each side (depending on thickness) or until brown, cooked through and tender

  5. Serve hot and garnish with chopped coriander.
